Why Matcha?
Just like high-quality cashmere, matcha is timeless, vibrant, and requires craftsmanship to produce. Its earthy, calming flavor profile is the perfect antidote to the holiday sugar rush, offering a sophisticated, balanced sweetness that feels like a fresh start.
This cheesecake is dense yet airy, rich yet refreshing—a texture as smooth as the 100% cashmere you know and love.
The "Green Velvet" New Year Cheesecake
Prep time: 30 mins | Bake time: 60 mins | Chilling: 4+ hours
We recommend using ceremonial grade matcha for that vibrant emerald green color that signifies prosperity and new growth for the year ahead.

The Ingredients
For the Midnight Crust:

1 ½ cups chocolate cookie crumbs (like Oreos, filling removed)

5 tbsp unsalted butter, melted

Pinch of salt
For the Cashmere Filling:

24 oz (3 blocks) full-fat cream cheese, softened to room temperature

1 cup granulated sugar

3 large eggs, room temperature

1 cup sour cream or heavy cream

2 tbsp premium Matcha powder (sifted)

1 tsp pure vanilla extract

1 tbsp all-purpose flour
The Ritual (Instructions)
1. Prepare the Foundation
Preheat your oven to 325°F (160°C). In a medium bowl, mix the chocolate cookie crumbs with the melted butter and salt until it resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes to set, then let it cool.
2. Create the Silk Texture
In a large mixing bowl (or stand mixer), beat the softened cream cheese and sugar on medium-low speed until it is completely smooth and creamy. Note: Do not overbeat, as introducing too much air can cause cracks.
3. Add the Flavor
Sift in the matcha powder and flour. Add the vanilla extract and sour cream. Mix until just combined and the beautiful green color is uniform.
4. The Bind
Add the eggs one at a time, mixing on low speed just until the yellow disappears. Pour the batter over your cooled crust.
5. The Gentle Bake
To ensure a texture as soft as our scarves, use a water bath. Wrap the bottom of your springform pan in double layers of heavy-duty foil. Place the pan in a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the side of the cheesecake pan.
Bake for 60 to 70 minutes. The center should still have a slight "wobble" (like Jell-O) when you gently shake the pan.
6. The Cool Down
Turn off the oven and crack the door open slightly. Let the cheesecake cool inside the oven for 1 hour. This slow cooling prevents cracking. Afterward, refrigerate for at least 4 hours (preferably overnight).
